The short version
Embassy Room La Marina is not where I would go for a casual drink or a cheap dinner. It is where I would go when the meal actually matters.
The restaurant is formal without feeling stiff, the service was excellent, and the food backed up the setting. The seafood was consistently good, the presentation was polished, and the Italian dishes were the main reason I would go back.

The seafood
The scallops were nicely seared and presented cleanly. The octopus was another strong plate, with good texture and a more refined presentation than you would expect from a casual Italian restaurant.
Neither dish felt like filler before the main course.

The main reason to come
The Italian side of the menu is the reason to visit. Our seafood pasta had plenty of seafood, good flavor, and the kind of ingredient quality that helps justify a much higher bill than you would pay at a neighborhood Italian restaurant.
There are plenty of attractive hotel restaurants where you are mostly paying for the room. That was not my impression here. The food carried the experience.

Service, atmosphere, and value
Service was excellent throughout the meal. The dining room is quiet and polished enough for a business conversation without feeling like a boardroom. It also works for an anniversary, birthday, or another occasion where you want something more deliberate than a normal night out.
This is firmly in Bangkok's expensive dining category. That does not make it bad value. It means you should choose it for the right reason.
If you want to try the restaurant while keeping the cost more controlled, the set lunch is the smarter first visit. Park Hyatt currently lists its three-course Il Pranzo set lunch from THB 980++ per person, with the menu rotating weekly.
Recommended. Come here to eat, not simply to have drinks in a luxury hotel.
